Ugh.  I am sooo looking forward to Fall for once.  : p..
 Two trips to the store in something like this, except our van has a driver's side door that was opened too far and now creaks, squeaks, pops and protests being opened because in all honesty, it really doesn't want to go anywhere either..
 And finally after one 90+ minute shopping trip and then another 50+ minute round, and I can finally sit down and relax for a bit.
Yay Me!  : )..

TGIF.. For sure.. Whew.




Lol.  That's been me the past couple days, you wouldn't know it but I've been a tad bit cranky.  : )..  Ha!

My early day at work..

One of our dispatchers get to meet a couple from Joplin, MO after he had responded to their Hold Up Alarm and dispatched authorities in their area.  The couple had found some neighbors who needed medical help and knew that their cellular back up system was still functioning.  They activated the signal and were able to summon the EMT's close enough to their house to rescue those that were injured.  The Stice's came to town to meet our operator today and be there when he was given his LifeSaver Award.

I love shrimp..

Stopped procrastinating long enough to actually clean the frost bitten food out of our freezers this morning and discovered some shrimp hidin out in there that is still good. After doin a happy dance for a couple minutes, mumblin like Bubba from "Forrest Gump", I thought of all the viable opportunities that could lie ahead. Which made me think of a delicious shrimp chimichanga. Since I'm goin in to work early today, that wasn't going to work. Then! It hit me. Perkins has a N'awlins Eggs Benedict with chicken, sausage, shrimp (yay!!) and a chipotle hollandaise sauce. Ohhh yeah. I love eggs benedict. Toss some shrimp in and I am a happy, happy, girl. Yum mee! : )..

I think this has to be the funniest blog (and that's saying something because I've found some great ones) I have had the chance to read!  I couldn't make it past the second brick game, "Brick Roulette" for almost five minutes because I was suffering (ha!) from a huge laughing fit!  Love her site!  You will too. I wanna try this..

Baked Salmon
Preheat oven to 400 degrees.
Mix 1 tsp mustard, 1 tsp tamari (which I believe is Sesame Paste? I finally saw some at one of our grocery stores), 3/4 cup water and sliced scallions.  Pour over fish and bake 18-22 minutes.

Sounds yummy.  And easy.  Which is right up my alley.  Lol.  Mind you, I really am not a good cook.  I actually had to post on facebook the following quip, "My momma always told me a watched pot never boils.  I guess she should have included that they don't boil if you don't turn the burner on either!"  Lol.  Yeah.  Sooo.  I am soooo not a cook.  But I am definitely going to give this one a shot.  : )..

Ugh. Argh. Are you kidding me?

If Plenty of Fish does not stop, I am going to be a quivering ball of jello, laying on the floor, crying because I have officially lost..  my..  mind..  I can't tell you how many times I have emailed PR@POF.com and still, the torture continues.  I am thinking about suing them for harassment.  Or something.  That stupid commercial haunts me in my sleep.  It's terrible!  Horrible I tell you!  Gah!  Enough already.  I hear it in the morning.  I hear it at night.  They won't stop running it and it's driving me innnnnsannnne.  Geico had some great commercials a few years ago where the Gecko was riding around in a car, passing another vehicle with some dogs pressed against the window.  That music was sooo great, I used to run to the tv to listen.  POF makes me want to run headlong into a brick wall so that I can knock myself out.  Or to the kitchen so that I can jab rusty spoons in my eardrums.  Seriously.  Ugh.  It is reallllly just THAT bad.  They won't stop.  : (..  They..  just..  won't..  stop.......  I....  really....  am....  going....  to....  lose....  ....  Dang it.  Too late.  It's gone....  ljaareajdldjfawhh,...  sigh.....

Not for those who are easily offended, because, well, there are quite a few offensive but funny things in this movie.  It's Ted the Bellhop's first night on the job, and it just so happens to be New Year's Eve.  Each of the "Four Rooms" is a different story in itself all tied together by the poor, frazzled Ted.  Lol.  I skip the first story with Madonna, but the second one with Jennifer Beal and then the third one with Antonio Banderes are a hoot.  Antonio's room is by far, the best part of this movie.  : )..  It's finally coming back out on DVD and I plan on grabbin me a copy.  I've been wanting it for quite a while!

The Chicken Recipe.. Super EZ.. Super Deelish..

Here it is.  My hubby's finger-lickin chickin recipe.  U know.  The one that will make ya lick everyone else's fingers too.  : )..  Lol.  It's super ez and suuuper delish.  If you make it and invite other people over, you will either have to lock your doors next time u make it, or deny that this is the reason you are buyin some chicken.  Or tell them to make their own. 

All it is...  One chicken (duh), innards removed (and boiled for your pups if u want to see them go crazy and lick the ceramic off their bowl), dried very well with paper towels, rubbed with butter, and then sprinkled with seasoned salt.  You can add a little garlic salt if ya want.  Cook it in a 350 degree oven for about an hour and a half, depending on the size of the bird, basting with the juices every once in a while.  It's done when the skin is crispy and brown.  If you don't eat the skin, you can remove it after it's done cooking and the inside stays nice and juicy.  I'm tellin ya.  The skin might not be healthy, but it is sooooo good.  We don't do the chicken that often so it's not going to kill me to have that every once in a while.  : )..

Milo.. You are drivin me crazy! Ack!

I love our 9 month old pup, Milo.  He has his own blog.  Lol.  His family gets online but not on facebook, so it was only logical to start him one so that they could watch him grow up if they wanted to.  : )..  Lately, he's starting to develop some really bad habits.  He barks at EVERYTHING.  A shadow.  Bark!!  Bark!!  Bark!!  A noise.  Bark!!  Bark!!  Bark!!  Another dog barking outside (our neighbors are sooo considerate and leave their female coon/lab mix out so she can bark at everything and help Milo bark at everything).  Bark!!  Bark!!  Bark!!  Me posting on the computer.  Bark!!  Bark!!  Bark!!  His sister, Auntie Em (our older Cairn Terrier), his brothers (two cats), a leaf outside, cats outside, our other neighbors who are remodeling or flipping the house next door, including new roofing.  Bark!! Bark!! Bark!! Bark!! Bark!! Bark!! Bark!! Bark!! Bark!!

He's going through what is technically his "second" puppy training class at our local PetSmart.  We put Emmy through two classes before we got Milo, so he learned a lot from her and passed his 8 week puppy class in one hour.  He's a genius!  Gets gold stars at class all the time.  And then we get home.  He's going through intermediate / advanced training right now.  I'm not entirely convinced that our trainer hasn't decided to integrate those training classes because she is afraid we will bring Milo and Emmy back for another training class.  Lol.  They lose their little puppy minds when they see another dog in the store.  No socialization skills whatsoever.  None.  It's embarrassing. 

Soo.  One trainer, Kevin, said we should ignore Milo when he barks.  Which kinda works.  Sometimes.  He will get a little bored after about the 100th bark and move on to something else.  Bark!  Bark!  Argh.  He is drivin me crazy.  Lol.  I love him, but a shock collar sounds..  umm..  tempting.  Hmm.  I don't want to resort to that but he just won't stop.  He barks at night.  He barks in the morning.  He barks at EVERYTHING.  Dogs on tv.  A fly.  Bark!! Bark!! Bark!!  Sigh.  Bark!! Bark!! Bark!!  I need to call Cesar Milano.  Sigh.  Bark!! Bark!! Bark!!  Sigh.  I love Milo.  Just not his bark.  Sigh.......  Think I might hafta hava mimosa and relax for a bit.  Bark!! Bark!! Bark!!

Ingredients

  • 1 can (11 ounces) white corn, drained
  • 1 can (11 ounces) Mexicorn, drained
  • 1 cup (4 ounces) shredded fat-free cheddar cheese
  • 4 green onions, chopped
  • 1/2 cup fat-free sour cream
  • 1/2 cup fat-free mayonnaise
  • 1 can (4 ounces) chopped green chilies
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon chili powder
  • Baked tortilla chip scoops

Directions

  • In a large bowl, combine the first nine ingredients; sprinkle with chili powder. Refrigerate until serving. Serve with tortilla chips. Yield: 4 cups.

Nutrition Facts: 1/4 cup (calculated without chips) equals 58 calories, trace fat (trace saturated fat), 3 mg cholesterol, 327 mg sodium, 11 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchange: 1 starch.

Sounds pretty darn tasty if ya ask me.  : )..

Cheatin' on Chipotle for the Culinarily Challenged Cookers..

I love Chipotle.  Don't get it often.  Love it just the same.  Here's a lil sumpin, sumpin my mother-in-law and husband helped create or inspire..  If ya'll are anything like me, lol, you don't cook much.  Thankfully, I married someone who cooks very, very, very well.  You should try his chicken.  Lol. It is so finger-lickin good, you'll be lickin everyone else's fingers too.  (he doesn't get why i say that, try his chicken and you will know..  and agree!)

Anyway, I digress.  Here's my Cheatin on Chipotle idea..  Woot.
Zattaran's (or other) Rice mix (doesn't matter which, Dirty Rice, Red Beans and Rice, Jambalaya, whatever).  Browned and drained hamburger.  Salsa.  Cheese.  Sour Cream.  Tortillas.
(ps - if u are time challenged like me because I spent too much time on the 'puter, nuke the rice in the microwave, tastes just as good, u don't have to stand over it stirring, no one will know unless they can see you and you can do other things like chop veggies or watch Y&R in the meantime)
Add ingredients to a warm tortilla and roll it up.  Tastes just as good as Chipotles, you can make just as much and it costs a fraction of the price.  Leftovers are just as good.  Woot.  I hate yucky leftovers.

Bonus recipe from my husband, the cooker: 
Black Bean And Corn Salsa..  Ooooh..  You gotta try this too..
One can of black beans, slightly drained.  One can of corn, drained.  One can of Rotel, slightly drained.  Chopped cilantro and onion to taste.  Palmful of salt.  Dash of chili powder and cumin.  Juice from half a lime (Rachel Ray says to nuke them for 10 seconds and hold it cut side up, juices easier).  Stir together and crack open a few bags of corn chips.  Sooo good.  You will make it often.  I guarantee that.  You can also double the ingredients and make more.  Hint, hint, hint. You will want to make more because it goes fast! : )..

Rachel Ray's Fake Out Deep Fried Ice Cream..
Vanilla ice cream, however many scoops you want..
Crushed corn flakes sprinkled on top..
Cinnamon sprinkled on top..
Honey poured on top..
Chocolate syrup, whipped cream and cherry - optional..
ENJOY!  Ohhh yeah.  It's just that easy..  And Yummy,
Yummy, Yummy in your Tummy, Tummy, Tummy!
Beat others off with your spoon.
Threaten them "Tommy Boy" style, "Your Mother

Make them make some of their own.

I'm working on Sunday mornings at an apartment group home where the clients cook and clean for themselves.  Spent over an hour in a grocery store today when it usually takes less than thirty minutes, waiting on four clients to buy $50 worth of groceries each.  Had a debate as to whether one person had any meat to eat, he assured me he had a freezer full, despite me knowing full well he didn't buy any last week either.  Had to wait 50 minutes for one person to mosey up and down the aisles because she forgot her calculator.  Had to park the 15 passenger van in the back forty because someone else helped our handicap placard disappear.  Had one client being propositioned for a cigarette outside.  Couldn't keep three of them all in one place while I was waiting on the 50 minute shopper to be done.  Had two different cashiers having trouble cashing the store's vouchers.  Had to walk out when the police were debating with the propositioner as to why she had to "vacate the parking lot".  Had the 50 minute shopper laughing like Beavis and Butthead and the one who was propositioned laughing like a hyena.  Whew.  Chaos..  Chaos..  Chaos..  Lol..  Oooh..  Wait..  It was a full moon on the 15th.  Dang.  I shoulda known.
